07:01 - Take your first sip of this blend of Brazillian Yellow Bourbon Deterra and Colombian Tacueyo coffees. It was grown between 1000m and 2000m above sea level to create a cup that, we think, tastes a bit like milk chocolate, citrus fruits and brown sugar.
Keep drinking it until 11:01 am when you switch to our 11:01 Decaf.

All our coffee is roasted by our brother James, or as we call him Jal.
He's been working at the top of the speciality coffee game for the past 15 years.

Our 07:01 Wildish House Blend features a combination of Brazilian Yellow Bourbon Daterra and Colombian Tacueyo coffees.
Daterra
Tasting notes: yellow fruits and sugar cane, along with a medium body and sweetness reminiscent of brown sugar. Only the ripest cherries of the yellow bourbon varietal are selected for this coffee. The Daterra farm processes its coffee by pulping the cherries without fermentation to remove the mucilage. This Arabica coffee is grown at elevations between 1000m and 1200m.
Colombia Tacueyo
Tasting notes: Apple, raspberry, toffee, blackberry. This syrupy, well-balanced cup has a hint of lime. The Tacueyó Reserve is situated in the Toribio municipality in the northeastern part of Cauca. ASPROCRIT, the association producing Tacueyó Reserve coffee, joined the Cencoic Cooperative in 2012 with 194 families. The Association has since grown to 521 families, each cultivating their coffee on farms averaging 0.8 hectares. This washed Arabica coffee is grown at altitudes between 1800m and 2200m.
a carbon negative coffee
This means the Daterra farm sequester more carbon from the atmosphere than they emit, despite relying on CO2-producing equipment like tractors and fertilizers.
Their 13 million coffee trees are key to carbon sequestration, as they absorb CO2 and fix it into the soil.
Additionally, they protect 50% of their native vegetation, use composting techniques, practice agroforestry and regenerative agriculture, and power their industrial areas with solar energy.

How should I brew it?
We think this coffee tastes great with any brewing method.
We drink it black in the morning and make it with a V60, Aeropress or Cafetière.
And when we get to the shop we drink it with milk in a Flat White.
We think it's delicious and we're pretty fussy about our coffee.

A 250g bag of coffee will make:
- 12-13 double espressos
- 12 Pour overs
- 16 Cups from an AeroPress
- 6 Cafetières for two people
We would go through a 250g bag of coffee in a few days, but some people could make it last a week.

We serve this coffee in our shop in Pateley Bridge and it gets some really great feedback.
